Three-Cheese Spinach Pizza

Spinach adds a flavour twist to this classic cheese combo. Instead of fresh spinach, you can also use one package (300 g) frozen, thawed and drained. For a milder flavour, substitute smoked provolone or Cheddar cheese for the blue.

    Pizza Dough
    1 tbsp (15 mL) extra-virgin olive oil
    1 clove garlic, thinly sliced
    1/4 tsp (1 mL) pepper
    1 bunch spinach (8 oz/250 g), trimmed, cooked and squeezed dry
    1 cup (250 mL) shredded mozzarella cheese
    1/3 cup (75 mL) grated Parmesan cheese
    4 oz (125 g) Gorgonzola cheese, crumbled

Preparation:

On lightly floured surface, roll out dough into 14-inch (35 cm) round; centre on greased pizza pan. Brush with oil; sprinkle with garlic, pepper and spinach. Top with mozzarella, Parmesan and Gorgonzola cheeses.

Bake in bottom third of 425°F (220°C) oven until cheese is bubbly and crust is golden and slightly puffed, about 20 minutes.
