Tom Collins Cocktails
This pitcher version of the classic cocktail is perfect for summer cocktail parties.

1 cup (250 mL) lemon juice (about 6 lemons)
3 tbsp (45 mL) granulated sugar
3 cups (750 mL) soda water
1-3/4 cups (425 mL) gin
2 cups (500 mL) ice cubes
Orange slices
Maraschino cherries
Preparation:
In microwaveable measuring cup, microwave lemon juice with sugar at high for 1 minute. Whisk syrup until sugar is dissolved. (Make-ahead: Refrigerate in airtight container for up to 1 week.)
In pitcher, combine lemon syrup, soda water and gin; stir in ice to blend and chill. Garnish with orange slices and cherries.
