1 cup (250 mL) diced seeded peeled tomato
1 diced cored peeled pear
1 hot green chili pepper
1 clove garlic, minced
1/4 cup (50 mL) golden raisins
3 tbsp (45 mL) cider vinegar
2 tbsp (25 mL) packed brown sugar
1 tbsp (15 mL) tomato paste
1 cinnamon stick
1/4 tsp (1 mL) each salt and pepper
Preparation:
Discard cinnamon stick and chili pepper; simmer, uncovered, until thickened, about 20 minutes. (Make-ahead: Let cool. Refrigerate in airtight container for up to 5 days.)
