Tropical Fruit with Lichee Lime Syrup
Light and fresh, this easy fruit salad makes a great finish for any menu. Any leftovers are delicious with yogurt and granola for breakfast.

4 cups (1 L) bite-size chunks cored peeled pineapple
1 can (10 oz/284 mL) mandarin oranges, drained
3 kiwifruit, peeled and cut into bite-size pieces
1 can (20 oz/565 mL) lichees in syrup
1 tsp (5 mL) grated lime rind
1 tbsp (15 mL) lime juice
Preparation:
In large bowl, toss together pineapple, oranges and kiwifruit.
Drain lichees, reserving 1/2 cup (125 mL) of the syrup. Add lichees, reserved syrup and lime rind and juice to bowl; stir gently. (Make-ahead: Cover and refrigerate for up to 4 hours.)
