Light and fresh, this easy fruit salad makes a great finish for any menu. Any leftovers are delicious with yogurt and granola for breakfast.

Ingredients

  • 4 cups bite size chunks cored peeled pineapple
  • 1 can 20 oz/284 ml mandarin oranges, drained
  • 3 kiwifruit, peeled and cut into bite size pieces
  • 1 can 20 oz/565 ml lychees in syrup
  • 1 tsp grated lime peel
  • 1 tbsp lime juice

Preparation

In large bowl, toss together pineapple, oranges and kiwifruit.

Drain lychees, reserving 1/2 cup (125 mL) of the syrup. Add lychees, reserved syrup and lime rind and juice to bowl; stir gently. (Make-ahead: Cover and refrigerate for up to 4 hours.)
