Light and fresh, this easy fruit salad makes a great finish for any menu. Any leftovers are delicious with yogurt and granola for breakfast.
Ingredients
- 4 cups bite size chunks cored peeled pineapple 4 4cups cupsbite size chunks cored peeled pineapple
- 1 can 20 oz/284 ml mandarin oranges , drained1 1can can20 oz/284 ml mandarin orangemandarin oranges, drained
- 3 kiwifruit , peeled and cut into bite size pieces3 3kiwifruit, peeled and cut into bite size pieces
- 1 can 20 oz/565 ml lychees in syrup 1 1can can20 oz/565 ml lychees in syrup
- 1 tsp grated lime peel 1 1tsp tspgrated lime peel
- 1 tbsp lime juice 1 1tbsp tbsplime juice
Preparation
In large bowl, toss together pineapple, oranges and kiwifruit.
Drain lychees, reserving 1/2 cup (125 mL) of the syrup. Add lychees, reserved syrup and lime rind and juice to bowl; stir gently. (Make-ahead: Cover and refrigerate for up to 4 hours.)
