Pump up an everyday tuna sandwich with an antipasto of peppers and olives to give it a whole new taste.
Ingredients
- 2 cans (each 6 oz/170 g) chunk white tuna , drained2 2cans (each 6 oz/170 g) cans (each 6 oz/170 g)chunk white tuna, drained
- 1/4 cup sliced green onions 1/4 1/4cup cupsliced green oniongreen onions
- 1/4 cup light mayonnaise 1/4 1/4cup cuplight mayonnaise
- 1/2 tsp salt 1/2 1/2tsp tspsalt
- 1/2 tsp pepper 1/2 1/2tsp tsppepper
- 1 red pepper , diced1 1red pepper, diced
- 1 green pepper , diced1 1green pepper, diced
- 1/4 cup chopped pitted olives 1/4 1/4cup cupchopped pitted oliveolives
- 2 tbsp olive oil 2 2tbsp tbspolive oil
- 1 tbsp drained capers 1 1tbsp tbspdrained capercapers
- 1 tsp dried oregano 1 1tsp tspdried oregano
- 4 whole wheat kaiser rolls 4 4whole wheat kaiser rollwhole wheat kaiser rolls
Preparation
In bowl and using fork, mash together tuna, onion, mayonnaise and half each of the salt and pepper; set aside.
In separate bowl, combine red and green peppers, olives, olive oil, capers, oregano and remaining salt and pepper.
Cut rolls in half; hollow out enough of the insides to leave 1-inch (2.5 cm) thick walls. Spoon pepper mixture into bottom halves; mound tuna mixture on top. Sandwich with tops of rolls.
