Veggie Burrito

A sandwich for supper? Why not - especially when the fixings for a satisfying meal are quick to put together.

Servings: 2

Ingredients:

    2 large flour tortillas
    2 tbsp (25 mL) Easy Bean Spread
    1/2 cup (125 mL) each shredded cheese, shredded lettuce, chopped sweet peppers and canned or thawed corn kernels
    1/4 cup (50 mL) salsa
    2 tbsp (25 mL) light sour cream

Preparation:

Spread tortillas with bean spread.

Sprinkle with cheese, lettuce, sweet peppers and corn kernels.

Top with salsa mixed with sour cream.

Fold bottom over filling; fold sides over top.
