Warm Banana Cobbler
Sweet banana slices in a creamy custard under a nutty topping make a brilliant combo of rustic and sophisticated.

4 eggs
1/3 cup (75 mL) granulated sugar
1-1/2 cups (375 mL) whipping cream
1-1/4 cups (300 mL) milk
1 tsp (5 mL) vanilla
8 ripe bananas
1 cup (250 mL) all-purpose flour
1/2 cup (125 mL) chopped almonds
Preparation:
In large bowl, whisk eggs with sugar; set aside. In heavy saucepan, heat cream with milk until bubbles form around edge; whisk into egg mixture. Return to pan; cook over medium-low heat, stirring, until thick enough to coat back of spoon, about 10 minutes. Transfer to clean bowl; stir in vanilla. Place plastic wrap directly on surface; refrigerate until cold. (Make-ahead: Refrigerate for up to 3 days.)
Slice bananas into separate large bowl. Add custard; gently stir. Spoon into eight 4-inch (10 cm) ramekins or soufflé dishes. In small bowl, mix flour with almonds; sprinkle over custard and pat lightly. Broil until topping is crusty and golden but bananas remain cool, 2 minutes.
