Sweet red peppers meets salty feta cheese in this filling, main-dish spinach salad.
Ingredients

1/4 cup (50 mL) extra-virgin olive_oil
2 cups (500 mL) sliced mushrooms
2 cloves garlic, minced
1 cup (250 mL) sliced red onion
1 lb (500 g) green_beans, trimmed
1 sweet red pepper, sliced
1/4 cup (50 mL) oil-packed sun-dried_tomatoes, chopped
1/4 cup (50 mL) red_wine_vinegar
2 tbsp (25 mL) liquid honey
1/4 tsp (1 mL) each salt and pepper
4 cups (1 L) packed torn spinach leaves
1/2 cup (125 mL) crumbled Canadian feta_cheese
1/4 cup (50 mL) black_olives
Preparation
In nonstick skillet, heat 1 tbsp (15 mL) of the oil over medium heat. Add mushrooms, garlic and onion; cook for 5 minutes.
Add beans and red pepper; cover and cook, stirring occasionally, until beans are tender-crisp, 5 to 7 minutes. In small bowl, whisk together remaining oil, tomatoes, vinegar, honey, salt and pepper; drizzle over bean mixture. Transfer to large bowl; toss to coat.
Add spinach, half of the feta and the olives; toss well. Sprinkle with remaining feta.
