Warm Potato Salad with Brie

Firm, waxy-textured potatoes are ideal for salads. Choose new potatoes in season and don't peel them.

Ingredients

Preparation:

Cut potatoes into 1/2-inch (1 cm) cubes; spread in 8-cup (2 L) casserole. Cover and microwave at High for 8 to 10 minutes or until tender.

Whisk together oil, vinegar and mustard; stir into potatoes.

Sprinkle with onion and Brie; cover and microwave at High for 30 to 40 seconds or until cheese softens.

Stir gently; season with salt and pepper to taste. Divide among 4 lettuce-lined plates. Garnish with radishes and parsley.
