Ingredients

Preparation

In large pot of boiling salted water, cook pasta until tender but firm, about 8 minutes. Drain.

Meanwhile, in large bowl, whisk together oil, vinegar, mustard, garlic, salt and pepper. Add hot pasta, spinach, ham, tomatoes and half of the goat cheese; toss to coat.

Divide remaining goat cheese over each serving. Sprinkle with green onion.

Variations
Warm Spinach and Chicken Pasta Salad: Replace ham with cooked chicken breast.

Vegetarian Warm Spinach Pasta Salad: Replace ham with 1 can (19 oz/540 mL) drained rinsed chickpeas or mixed beans.

Tip: You can use other short, curled or twisted pasta shapes, which makes it easy to pick up both the pasta and chunks of meat and vegetables at the same time.
