Ingredients
- 3 zucchinis , (about 1 lb/500 g)3 3zucchinizucchinis, (about 1 lb/500 g)
- 2 tbsp olive oil 2 2tbsp tbspolive oil
- 1 tbsp wine vinegar 1 1tbsp tbspwine vinegar
- 1/2 tsp dried oregano 1/2 1/2tsp tspdried oregano
- 1/4 tsp salt 1/4 1/4tsp tspsalt
- 1/4 tsp pepper 1/4 1/4tsp tsppepper
- 2 cups cherry tomatoes , quartered2 2cups cupscherry tomatocherry tomatoes, quartered
- 1/4 cup toasted pine nuts , (optional)1/4 1/4cup cuptoasted pine nutpine nuts, (optional)
Preparation
Using vegetable peeler, cut zucchini into ribbon-thin slices; place in bowl. Toss with oil, vinegar, oregano, salt and pepper. Transfer to grill basket. Place on grill over medium-high heat; close lid and cook for 3 to 5 minutes or until softened. Return to bowl; toss with tomatoes, and pine nuts (if using).
