Wasabi Spinach Mayonnaise
Wasabi, or Japanese horseradish, is available in tubes or in powder. To make 1 tbsp (15 mL) from powder, mix 2 tsp (10 mL) powder with 1-1/2 tsp (7 mL) cold water and let stand for 5 minutes.

1/2 cup (125 mL) thawed frozen chopped spinach
1/3 cup (75 mL) light mayonnaise
4 tsp (20 mL) mirin or sweet sherry
4 tsp (20 mL) rice vinegar
1 tbsp (15 mL) prepared wasabi
1 tsp (5 mL) sesame oil
1/4 tsp (1 mL) salt
Preparation:
In sieve, firmly press spinach to extract liquid. In food processor, purée together spinach, mayonnaise, mirin, vinegar, wasabi, sesame oil and salt. Transfer to bowl.
