Watercress Mayonnaise

1 cup (250 mL) packed watercress leaves
3/4 cup (175 mL) light mayonnaise
4 tsp (20 mL) Dijon mustard
1 tbsp (15 mL) lemon juice
Pinch salt
Preparation:
In food processor or blender, purée together watercress, mayonnaise, mustard, lemon juice and salt until smooth. (Make-ahead: Refrigerate in airtight container for up to 24 hours.)
