Watermelon Salad

Fresh, juicy watermelon tossed with crisp fennel makes a wonderful sweet and savoury salad. Try it as a side dish with your favourite grilled meat.

  • 1 tbsp 1tbspwhite wine vinegar
  • 1 tbsp 1tbspextra-virgin olive oil
  • pinch pincheach salt and pepper
  • 2 cups 2cupsseeded watermelon cubewatermelon cubes
  • 2 cups 2cupsdiced fennel bulb
  • 1 1green oniongreen onions, thinly sliced
  • 2 tbsp 2tbspshaved Romano cheeseRomano cheese, (about 1 oz/30 g)

In bowl, whisk together vinegar, oil, salt and pepper; add watermelon, fennel and green onion. Toss gently to coat; top with Romano cheese.
