White Chocolate Margarita Mousse
This light, tangy dessert flavoured with tequila and lime makes a refreshingly special finish to any festive meal. For that extra flourish, serve the mousse garnished with finely grated lime rind in sugared margarita or martini glasses.

2 eggs
2 egg yolks
2/3 cup (150 mL) granulated sugar
1 tbsp (15 mL) finely grated lime rind
1/2 cup (125 mL) lime juice
2 tbsp (25 mL) tequila
3 oz (90 g) white chocolate, chopped
3/4 cup (175 mL) whipping cream
Preparation:
In heatproof bowl over saucepan of hot (not boiling) water, whisk together eggs, egg yolks, sugar, lime rind and juice, and tequila; cook, whisking often, until thickened and mixture falls in ribbons when whisk is lifted, about 8 minutes. Remove from heat.
Add white chocolate; stir until melted. Pour into clean bowl; place plastic wrap directly on surface. Refrigerate until chilled, about 1 hour. (Make-ahead: Refrigerate for up to 3 days.)
In bowl, whip cream; fold half into lime mixture. Fold in remaining whipped cream just until combined. Spoon into glasses or dessert dishes. (Make-ahead: Cover and refrigerate for up to 2 days.)
