Yellow Tomato Toasts

Toasts
1 French_stick (baguette)
1 tbsp (15 mL) olive_oil
Topping
4 small yellow tomatoes, seeded and chopped
1/4 cup (50 mL) each chopped red onion and fresh basil
1 clove garlic, minced
1 tbsp (15 mL) extra-virgin olive_oil
2 tsp (10 mL) wine_vinegar
1/2 tsp (2 mL) grated Parmesan cheese
Preparation
Toasts
Cut French stick into twelve 1/2-inch (1 cm) thick slices; brush with olive oil. Place, oiled side down, on grill over medium heat; close lid and grill for 3 to 5 minutes or until toasted. Top with the following.
Topping
In bowl, mix tomatoes, onion, fresh basil, garlic, olive oil and vinegar. Mound on toasts; top each with grated Parmesan cheese.
