Hi
I have misplaced an old recipe for Banana Bran Muffins, made with white,
whole wheat, bran, brown sugar, bananas, raisins, buttermilk, salt ??????
was published in Canadian Living maybe Apr 2000.

I think this is the one you want:
1 1/2 cups natural bran
1 cup all-purpose flour
1/2 cup whole wheat flour
1 1/2 tsp baking soda
1/4 tsp salt
1 1/3 mashed ripe bananas (2)
1 cup buttermilk
1/2 cup packed brown sugar
1/3 veg oil
1 egg
1 cup raisins or dried cranberries
Banana chips (optional decoration)
1. In large bowl mix all the dry ingredients together.
2. In another bowl whisk the wet ingredients. Pour over dry. Sprinkle with raisins. Stir just until moistened.
3. Spoon batter into 12 large greased or paper-lined muffin cups. Arrange banana chips on top (if using). Bake in centre of 400F (200C) oven for 18 - 20 mins or until tops are firm to the touch. (Makes 12) |
