Hey everyone. I'm new to this forum. Hope this is going to become my go-to place for advice, sharing and friends!
I've been dealing with back-to-school mayhem in my house. Breakfast is one of the check-list items that seemed to always add to the anxiety..what to serve, how fast can this be eaten...I know you've all been there! LOL.. I'm trying to get four kids out the door to a school bus by 8:10...hubby leaves the house by 7:30 so not alot of time to spare!
Wanted to know if any of you would be up to the challenge of sharing your morning breakfast (healthy please!) ideas with me and all of the other moms on this forum! The summer was lovely, all of us sitting together with time to share a few extra moments in the mornings...now it just seems to be back to the rush again and I'd really like to see the momentum keep on following through from the summer.
In my on-line searches for great recipes, etc.. I also came across a great site (contest) where you can win Breakfast for a YEAR! I know that as a mom with a family of 6 to feed I was jumping all over this! It's definately worth sharing so I thought I'd share the wealth while I'm at it!
Looking forward to hearing from all of you soon with all of your great breakfast ideas!
Oops...almost forgot the contest link...
Cheers moms! Chat soon and have a great day! Gotta run and p/u the kids from the school bus in just a short while! |

| Have your kids started learning to be creative and try making breakfasts on their own? My brother and sister and I growing up loved to cook and our granny taught us from about age 5. We used to love experimenting and making a big batch of something quick that all 3 of us could have together. If yours aren't so into making it themselves, a really quick one I use often is granola bars and yogurt tubes! Toaster waffles with fruit is a must in my house as well as smoothies from time to time. For my smoothies I get 2 cup size containers like the leftover from sour cream etc. and put in different miztures of chopped fruit (strawberry banana peach or raspberry blackberry, pineapple mango, there are too many combinations!) I fill the container about 2/3 full then put in about 1/3 to 1/2 cup of yogurt on top and freeze them like that. You take one out at night and put it in the fridge so it starts to thaw then toss it in the blender with some juice or milk and it's awesome! I live in a house of smoothie fanatics so it works for me! |

As a mother of 4 myself, I find it easier if they each get their own breakfasts in the morning. It's usually just cereal or toast, instant oatmeal, etc. Pack a good lunch and plan a healthy dinner and all is well. _________________ Susan A

my children are grown and gone now but here are a couple things I did when I had my own two and a friends 2 for breakfast.
apple crisp. or any fruit crisp.
I would make it the day before and when it was breakfast time I would put it into individual bowls add a splash of milk and zap it for 2 reheats.
kids love the idea of having pudding for breakfast I liked that it was no fuss no muss and quick.
Johnny cake. also made ahead. cut sizes appropriate for age and appetite pour a bit of syrup and a dab of butter, zap for 2 reheats and serve.
just expect a call from the school or other parents when your happy children tell that they have pudding and cake for breakfast.
I got a few and then a few requests for my recipes.
poached eggs and toast.
boil a small pot of water, drop up to 4 eggs in and turn the pan off. Put toast in the toaster and when the toast is done the eggs are a nice soft texture. for older children leave the toast whole and put the egg on it. but for smaller break the toast into smaller pieces and put the egg on this. total time 5 min. |

What I do for my two is make a big batch of breakfast burritos or omlette mc muffins. I freeze them and then on really cold mornings or on the days when we are all running late we just pop them into the microwave for a min or two and then they have a warm meal that has protein and even some veggies. My children are only allowed to have this once a week, they'd eat them everyday if they could! The amounts in the recipes are approximate.
Breakfast burrito
12 eggs (with or with out some milk)
1lb loose sausage meat
salsa
1 1/2 cups grated cheese
12 large tortillas
Brown and drain the sausage meat and break it up. Scramble fry the eggs. Place some egg, sausage, salsa and cheese in a tortilla and roll it up tucking in the ends. Wrap in plastic wrap and freeze in a large ziploc bag.
Makes about 12
Home version of Omlette Mac Muffins
12 eggs
12 english muffins
1 diced onion
1 diced green pepper
1lb of deli ham diced (or diced up bits of left over meat from dinner)
( I often use those little bits of spaghetti sauce that aren't enough for a meal instead of the ham, green pepper and onion)
1 1/2 cups of grated cheese
Slice and lightly butter the English muffins. Cook the veggies and put them aside. Make omlettes using 2 eggs at a time adding some of the veggies, ham and cheese (or the ever popular spaghetti sauce). When cooked, fold over every side of the omlette till you get a rectangle and cut that in half with your spatula. Place the omlettes on the English muffins, wrap and freeze in Ziploc bags. Warm up in the microwave.
We also do left over rice, they warm it up and eat it, bagels, yogurt, grilled cheese with pizza sauce and peperoni, even left over cheese tortellini. I love them having leftovers because it cleans out the fridge lol
Hope this helps

Hi;
I require high protein and this would be good or kids if you give them 1/2
a bagel each.
-1 milk dollop
-1 Bagel
-2 Eggs
-4 strips micro or real cooked Bacon chopped
- pat of margarine
-pinch salt and pepper
-1 small microwaveable covered dish like pyrex
-1 small plate 4 bacon & paper towel
Beat 2 eggs and a dollop milk in small cup
Spray or butter lightly microwaveable dish/bowl
Add eggs to bowl
If using real cooked bacon add to egg mixure
Cover w lid and put in MWave.
Toast Bagel
(If using micro bacon put on separate dish lined w papertowel).
Nuke eggs for 1 minute 50 seconds approx.
Meanwhile Butter Bagel
Remove nuked eggs and put in bagel, add s&p (will deflate)
(nuke micro bacon for 24-25 seconds and put in Bagel)
Cut in 1/2 and enjoy.
--------------------
Substitute bacon for chopped ham and onion and green/red peppers |
