Baby Carrots

Any of a number of varieties of carrot that are full-flavored and delicious when harvested tiny and tender. The darling of the nouvelle cuisine movement, baby carrots come in a rainbow of colors, from the usual orange to more-exotic browns and purples. The baby carrots usually seen in plastic bags in the grocery stores are not true baby carrots; they are baby-cut carrots, which are just regular-size carrots peeled, cut and shaved into a convenient two-bite size.
