Danbo Cheese

Also King Christian. A popular Danish semisoft cow's milk cheese with a pale yellow, slightly stretchy interior punctuated with small holes. It is a mildly flavored cheese and comes plain or enhanced with pungent caraway seeds, often in wax-covered rectangular blocks. Danbo is also known as King Christian cheese, named for King Christian IX of Denmark, who reigned from 1863 to 1906.
