An unripe tomato, used often in Southern cooking for its rich tomato flavor and high acidity. Green tomatoes are often used to make jams and preserves and one of the most well-known Southern treats: fried green tomatoes, made by dipping sliced green tomatoes in cornmeal and frying them in bacon fat or oil.
