Greens

A term used for leafy greens that have a strong, bitter flavor; used cooked as often as raw. Collards, mustard greens, kale and turnip greens fall into this category. All these spicy greens have their past in ancient history, as they were important foods for the wandering tribes in India, China, the Mediterranean and Asia.
