The fragrant leaves, peel and intensely flavored juice of the kaffir lime, native to Southeast Asia and now grown in California. The fruit has green, knobby skin and is slightly pointed at the stem end. An integral part of Thai cuisine, the kaffir lime is prized primarily for it leaves; its Thai name is makrut.
