Limoncello

A cold, Italian beverage made by immersing carefully grated lemon zest (so no pith is attached) in 100-proof vodka and aging it for up to 40 days in the dark, at room temperature. Sugar and water, simmered into a syrup - or simple syrup - is then added, and the mixture is strained into jars (to remove the zest) and frozen until use. The thawed lemon yellow-tinted liquid is enjoyed over ice, straight up or poured over desserts or fresh fruit, preferably while the drinker or diner sits in the sun, overlooking the Mediterranean.
