Pea Shoots

Dau miao, dow miao, dow miu. Tender, young spiraling stems, with newly opened leaves attached, harvested from the tips of pea plants (most often snow peas), which offer a taste reminiscent of peas, spinach and watercress all at once. Available in Asian markets, they are added to salads and, just before serving, to stir-fries.
