Pie

Any of various dishes of meat, vegetables or fruit that are baked in a pastry crust, with or without a top crust. The word is said to be derived from "magpie", from medieval times in France, when live birds were baked under a crust just enough to stun them; when the pie was opened, they would fly out "to the merriment of all present."

Pies originated as main-course dishes with meat, vegetables and spices. Mince pie was made of highly spiced, chopped meat and fruits in gravy. The sweet fruit pie, served as a dessert, came much later. To North Americans, "pie" refers to something baked under or in a pastry crust. See also pâté.
