Roasted Red Pepper

A red bell pepper that has been roasted or grilled over an open flame until its skin chars, then skinned and seeded. These peppers can be used in recipes or eaten on their own, and are a recently ubiquitous ingredient in North American cuisine. Roasted red peppers are often associated with Italian cuisine, where they are frequently a feature on antipasto platters.
