Salsa Verde

1. the "green sauce" typical of northern Spanish (particularly Cantabrian and Basque) cooking, especially in the classic hake dish merluza en salsa verde, made of vibrant green minced parsley, olive oil, garlic and white wine or fish stock. Not to be confused with the Mexican salsa verde made with tomatillo. 2. see salsa.
