Ingredients
- 1-1/4 cups whole bran cereal 1-1/4 1-1/4cups cupswhole bran cereal
- 1-1/4 cups skim milk 1-1/4 1-1/4cups cupsskim milk
- 1 egg 1 1eggeggs
- 1/3 cup margarine , melted1/3 1/3cup cupmargarine, melted
- 1 cup shredded carrots 1 1cup cupshredded carrotcarrots
- 1 cup unpeeled and shredded apples 1 1cup cupunpeeled and shredded appleapples
- 1/2 cup raisins 1/2 1/2cup cupraisinraisins
- 1-1/2 cups all-purpose flour 1-1/2 1-1/2cups cupsall-purpose flour
- 1/2 cup Splenda® No Calorie Sweetener, Granular 1/2 1/2cup cupSplenda® No calorie Sweetener, Granular
- 1 tbsp baking powder 1 1tbsp tbspbaking powder
- 2 tsp ground cinnamon 2 2tsp tspground cinnamon
- 1/2 tsp salt 1/2 1/2tsp tspsalt
Preparation
Combine cereal and milk; let stand 5 minutes. Stir in egg and margarine; add carrots, apple and raisins. Combine remaining ingredients in large bowl. Stir cereal mixture into dry ingredients, stirring just until moistened. Spoon batter into 12 large, greased or paper baking cup-lined muffin tins.
Bake at 400ºF (200ºC) for 20 to 25 minutes or until golden brown. Cool in pan 5 minutes and then turn out onto rack to cool.
