6-Week Slim-Down healthy snack: The 2-in-1 parfait

Welcome to week five of the 6-Week Slim-Down!  Congratulations, you’re almost there! I’m highlighting a healthy snack every week to help get you through those cravings and stick to your new healthy eating plan. (Check out last week’s roasted chickpeas.) This week’s snack is a two-in-one deal. I’ve made two delicious snacks that are prepared using the same healthy ingredients—one is a tasty breakfast and the other an indulgent-tasting dessert. Yogurt Parfait 1. The Parfait The first snack I made for today is the typical berry parfait. You pile berries, organic yogurt, granola (see the recipe below) and maybe a little drizzle of honey into a dish and you’ve got a delightful parfait with all kinds of antioxidants from the berries and probiotics from the yogurt. Frozen Yogurt 2. Frozen Yogurt But if you’re tired of the typical parfait and want to switch it up, blend together those exact same ingredients—berries, yogurt and honey (hold off on the granola)—then freeze the mixture. Once in the freezer, you can either mix it up about every half hour until you reach the desired consistency, or freeze completely then transfer to a blender or food processor and blend until smooth. Serve the frozen yogurt with a sprinkle of granola. This is an easy and forgiving recipe, so various ratios of fruit to yogurt can work, depending on how creamy you like your frozen yogurt to be. And to make the healthy homemade granola to go with each of these treats, I used this recipe, which features healthy fats from coconut oil and pumpkin seeds, plus all kinds of fibre. Granola 3 cups rolled oats 1/3 cup pumpkin seeds 1/3 cup sliced almonds 1 tsp cinnamon ½ tsp salt 6 tbsp maple syrup ¼ cup coconut oil, melted 2 tbsp warm water Toss together oats, pumpkin seeds, almonds, cinnamon and salt. In separate bowl, whisk together syrup, oil and water. Pour over oat mixture and combine. Bake on prepared cookie sheet in 250-degree Farenheit oven for about an hour, stirring every 15 minutes. Enjoy! For more granola recipes, check out these Tested-Till-Perfect granola options.
