three to six double-dips transfer 10,000 bacteria to the communal bowl. That means a greater risk of spreading foodborne illnesses, which affect two million Canadians every year according to Health Canada.
If you must dip that chip, know this: Salsa has more initial bacteria because it's more likely to drip from the chip back into the bowl, but
fewer bacteria survive its acidity.
On the other hand, creamy dips harbour fewer microbes because more dip sticks to the chip, but the bacteria multiply more quickly when the dip gets warm.
