How to turn chips into a healthy meal:
My favourite flavour coating for fish - such as Tilapia or Basa fillets - is lime-flavoured tortilla chips such as Tostidos Tortilla Chips with Lime Zest ! Using a rolling pin, crush the tortilla chips into very fine crumbs. Dip fish fillets into egg and milk mixture. Drop fillets into bag of tortilla crumbs, and shake to coat. Heat your frying pan to med-high, with 1 tbsp oil (I use canola) and 1 tbsp butter. Brown fish, cooking approximately 2 min. per side. YYYYYUUUUUMMMMMM!!!
Hint: I stock up on Tostidos when on sale - usually during Grey Cup, Stanley Cup or other events when friends gather. At 3 packages for $6, the chips works out cheaper than bread crumbs! Enjoy!
