Sweet Potato Skins1. Cut baked sweet potato into quarters and scoop out flesh. Brush with oil and bake in 450°F toaster oven until crispy.
2. Sprinkle with shredded Swiss cheese. Bake again until melted.
3. Top with a dollop of plain yogurt.
4. Sprinkle with sliced green onion.
