A New Twist on Mac and Cheese

Ingredients
- 375 g 375gpenne pasta
- 2 large 2largeoniononions, chopped
- 1 lb 1lbground lamb
- 1/4 cups 1/4cupsclarified butter
- 1/2 tsp 1/2tspfreshly cracked pepper
- 1/4 tsp 1/4tspcinnamon
- 1/4 tsp 1/4tspnutmeg
- 1/4 tsp 1/4tspallspice
- 1/4 tsp 1/4tspclovecloves
- 3 3eggeggs, (optional)
- 3/4 cups 3/4cupsgrated mozzarella cheese
- 1/4 cup 1/4cupwater
- 1 cup 1cuptomato soup or tomato juice
- 1 tbsp 1tbspvinegar
Preparation
Boil the Penne as normal, rinse, drain & set aside. Saute the onion in clarified butter (ghee) & add the ground lamb until brown all over ( approx 10 minutes). Combine all the spices above and add to the meat & onion mixture. Add the vinegar, tomato soup & water. Cover and simmer gently until meat is tender. Spread 1/2 Penne over bottom of casserole dish, then cover with lamb mixture & again with the penne pasta. Beat the eggs & pour over top of pasta, allowing it to seep through entire mixture. Cover with grated cheese and Bake at 400F for 30 minutes. Serve and enjoy!!!!
