Ingredients
- 375 g penne pasta 375 375g gpenne pasta
- 2 large onions , chopped2 2large largeoniononions, chopped
- 1 lb ground lamb 1 1lb lbground lamb
- 1/4 cups clarified butter 1/4 1/4cups cupsclarified butter
- 1/2 tsp freshly cracked pepper 1/2 1/2tsp tspfreshly cracked pepper
- 1/4 tsp cinnamon 1/4 1/4tsp tspcinnamon
- 1/4 tsp nutmeg 1/4 1/4tsp tspnutmeg
- 1/4 tsp allspice 1/4 1/4tsp tspallspice
- 1/4 tsp cloves 1/4 1/4tsp tspclovecloves
- 3 eggs , (optional)3 3eggeggs, (optional)
- 3/4 cups grated mozzarella cheese 3/4 3/4cups cupsgrated mozzarella cheese
- 1/4 cup water 1/4 1/4cup cupwater
- 1 cup tomato soup 1 1cup cuptomato soup or tomato juice
- 1 tbsp vinegar 1 1tbsp tbspvinegar
Preparation
Boil the Penne as normal, rinse, drain & set aside. Saute the onion in clarified butter (ghee) & add the ground lamb until brown all over ( approx 10 minutes). Combine all the spices above and add to the meat & onion mixture. Add the vinegar, tomato soup & water. Cover and simmer gently until meat is tender. Spread 1/2 Penne over bottom of casserole dish, then cover with lamb mixture & again with the penne pasta. Beat the eggs & pour over top of pasta, allowing it to seep through entire mixture. Cover with grated cheese and Bake at 400F for 30 minutes. Serve and enjoy!!!!
