This is a dish my father made from the old country. It was a favorite meal for a family of nine. We termed it German mac and cheese!
Ingredients
- 5 cups flour 5 5cups cupsflour

- 1 tbsp salt 1 1tbsp tbspsalt
- 1 tbsp parsley , or favourite herb1 1tbsp tbspparsley, or favourite herb
- 1 cup Canadian Cheddar Cheese , or other1 1cup cupCanadian cheddar cheese, or other
- 6 slices bacon 6 6slices slicesbacon
- 1 cup chopped green onion 1 1cup cupchopped green onion
Preparation
Saute bacon until crisp and dice to bite size pieces. Shred cheese and dice green onion. Set all aside while making the egg dough. Bring a large salted pot of water to boil. Combine flour, salt, herbs and eggs in a large mixing bowl. Add enough water to make a soft egg dough that will "drip". Using a "spatlze" maker from your local kitchen shop or a colander fill the basket or colondar with 1-2 cups of dough that will drip into the boiling salted water using a wooden spoon if necessary to cut the dough into small "buttons" into the water.
Keep water at a gentle simmer until dough buttons float to the top and are cooked. Drain each batch well and layer into a large roaster layering each batch with your bacon, onions and cheese. Repeat until all ingedients are used. Bake in a 350 degree oven until cheese is melted through approx 15 minutes. Enjoy as a main dish or divide recipe for a side dish.
