A friend online shared this with me one day and I love the combination of flavours. It's a great side dish with a ham or a pork roast.
Ingredients
- 6 strips bacon 6 6strips stripsbacon
- 1/2 cup chopped onion 1/2 1/2cup cupchopped onion
- 2 tbsp flour 2 2tbsp tbspflour
- 2 cloves of garlic , minced2 2clove garliccloves of garlic, minced
- 1/2 tsp salt 1/2 1/2tsp tspsalt
- 1/2 tsp pepper 1/2 1/2tsp tsppepper
- 3-1/2 cups fresh or frozen corn kernels 3-1/2 3-1/2cups cupsfresh or frozen corn kernels
- 1 tbsp chopped fresh parsley 1 1tbsp tbspchopped fresh parsley
- 1 tbsp chopped fresh chives 1 1tbsp tbspchopped fresh chives
Preparation
Preheat oven to 350F. In a large skillet, cook bacon until crisp. Drain, reserving 2 Tbsp. of drippings. Crumble bacon; set aside. Saute onion in drippings until tender. Add flour, garlic, salt and pepper. Cook and stir until bubbly; cook and stir 1 minute more. Remove from the heat and stir in sour cream until smooth. Add corn, parsley and half of the bacon; mix well. Pour into a 1-qt. baking dish. Sprinkle with remaining bacon. Bake, uncovered, for 20-25 minutes, until heated through. Sprinkle with chives.
