Baked Cod Casserole

This is a family favorite, easy to prepare, and good all year round. Served with steamed vegetables of your choice, it makes a complete meal.

  • 2 tbsp 2tbspolive oil, divided
  • 2 small-medium 2small-mediumonion, thinly sliced
  • 1 cup 1cupsodium-reduced chicken broth
  • 1 tsp 1tsplemon juice
  • 1-1/2 lbs 1-1/2lbscod filletcod fillets, cut into 4 pieces
  • 1/4 tsp 1/4tspground thyme
  • 1/2 tsp 1/2tspeach of salt and pepper
  • 2 cups 2cupsmultigrain bread, finely diced, like croutons (approx. 2 slices)
  • 1/2 tsp 1/2tsppaprika
  • 1/2 tsp 1/2tspgarlic powder
  • 1 cup 1cupmarble cheese or Swiss cheese, shredded

Preheat oven to 400 degrees. Heat 1 tbsp olive oil in large ovenproof dish over med heat. Add onions and cook 'til softened, stir frequently, about 10 min. Stir the lemon juice into chicken broth and add to pan. Turn heat up to bring to slow boil and cook til slightly reduced, about 5 minutes, stirring frequently. Place cod on top of the onions and season with salt, pepper, and thyme. Cover pan tightly (I use foil), and bake in oven for about 10-15 min (depends on thickness of fish). In med bowl, toss the cubed bread with the remaining 1 tbsp olive oil, garlic powder, and paprika. Remove dish from oven, spread bread mixture over the fish. Top with grated cheese and return to oven, bake uncovered 'til fish is done, about 10 more minutes. Enjoy!
