Baked Spaghetti

This is a really good dish for a crowd. Serve it with a salad and garlic bread and you have a well balanced meal. Also it is easy to prepare and does not take a long time to make.

  • 1 cup 1cupchopped oniononions
  • 1 cup 1cupchopped green oniongreen onions
  • 1 tablespoon 1tablespoonbutter or margarine
  • 1 can (28 oz) 1can (28 oz)tomatoes (with juice), cut up
  • 1 can (4 oz) 1can (4 oz)mushroom pieces and stem, drained
  • 1 can (2 1/4 oz) 1can (2 1/4 oz)sliced ripe olives, drained
  • 2 tsp 2tsporegano
  • 1 lb 1lbground beef, browned and drained (optional)
  • 12 oz 12ozspaghetti, cooked and drained
  • 2 cups 2cupsshredded Cheddar cheese
  • 1 can (10 3/4 oz) 1can (10 3/4 oz)condensed cream of mushroom soup, undiluted
  • 1/4 cup 1/4cupwater
  • 1/4 cup 1/4cupgrated Parmesan cheese

In a large skillet, saute onion and green pepper in butter until tender. Add tomatoes, mushrooms, olives and oregano. Add ground beef if desired. Simmer, uncovered, for 10 minutes. Place half of the spaghetti in a greased 13-in.x 9-in.x 2-in. baking dish. Top with half of the vegetable mixture. Sprinkle with 1 cup of cheddar cheese. Bake, uncovered, at 350 for 30-35 minutes or until heated through.
