Basil Grilled Cheese Sandwich

This was created with leftovers to complement a creamy basil tomato soup I had prepared.

  • 4 slices 4slicesItalian bread
  • 1 package 1packagefresh basil
  • 1 clove 1clovegarlic
  • 1/2 cup 1/2cupParmesan
  • 1/2 cup 1/2cupalmondalmonds
  • 3 tbsp 3tbspolive oil
  • 1 cup 1cupshredded mozzarella cheese

First, you must have a mortar and pestle or flavour shaker. In the mortar throw your garlic and smash. Heat the almonds in a fry pan until you can smell them or see them get a little color. Smash them as well, you may have to do in batches. Smash the basil and add to the garlic and almonds. Stir in the olive oil, salt, pepper, and parmesan. Now spread this mixture on the inside of the bread, both sides. Then slice your mozzarella and lay it on top. Close the sandwich and you can either brush with olive oil or butter the bread. Grill. It is just so yummy, yah?
