If you like taco's you'll love this new and exciting way to serve them and the corn chips on top just adds a nice crunch. Kids love this meal for so many simple reasons.
Preparation
Cook onions in skillet with oil until tender, then add beef and cook until browned. Sprinkle on taco seasoning then add olives and pasta sauce mixing until well combined. If sauce is too thick add a little water. Line a 8 or 9 inch round casserole dish with foil so it hangs over the sides (so you can use it as handles once it's done)... Lay one tortilla in dish then spread with meat sauce and cheese. top with another tortilla, meat sauce and cheese. Repeat layers. On the last layer add the corn chips in between the meat sauce and cheese. Place in 350 oven for 30 to 40 minutes or until bubbly and cheese is golden brown. Allow to cool for 5 minutes and then pull it out of the dish using the foil handles. Cut like a pie and serve with sour cream, salsa and guacamole.
