I grew up with this as our "cheap" version of the bottled cheezwiz and continue to make and serve it hot to rave reviews. Of course cold it continues o be an excellent cheese spread with a big difference, it tastes like real cheese.
Preparation
Use a double boiler for best results. Cut cheddar cheese into one inch cubes. Cut green onions. Place evaporated milk, cheese, green onions,cumin, salt and pepper to taste into top of double boiler. Heat up over boiling water until cheese is rounded. (3/4 inch balls so to speak) Pour mixture with butter into blender and blend on hi until smooth. Eat hot with bread for dipping or store until cool and use as you would other cheese spreads. Of course you can add other flavours - roasted garlic is another favourite.
