This smells great when cooking and is definitely a winter tummy warmer!

Ingredients

  • 2 lb lean ground beef
  • 3 peeled and sliced potatoes
  • 1 large onion, sliced
  • 6 carrots, peeled and sliced into coins
  • 1 can 10oz tomato soup
  • 1 can boiling water

Preparation

place sliced carrots, then potatoes, then onions in large greased casserole dish (I use a roasting pan). Top with ground beef and spread out beef right to edge of dish. Pour can of soup on top followed by the boiling water (Note: the water may "sit" on top of the soup...you can poke a few holes with a skewer so that the water settles down into the casserole). Cover casserole and place in pre-heated 350 degree oven and bake for 1 hour.
