Cameron's Famous Family Shortbread

This recipe has been in the family for generations and is a Christmas must have (if not the rest of the year).

Ingredients

  • 1 lb butter , at room temperature1 lb butter, at room temperature
  • 1 cup icing sugar 1 cup icing sugar
  • 1 tsp vanilla 1 tsp vanilla
  • 4 cups all purpose flour 4 cups all purpose flour

Preparation

In a mixer, beat butter and sugar until well blended and fluffy.

Add vanilla and beat well again.

Add flour one cup at a time until well blended. Dough will be quite stiff after last cup.

Remove beater from dough and turn dough out on lightly floured board, and knead dough for 5 minutes or so until well blended.

Divide dough into 4 portions and roll into logs. Roll each log in waxed paper or plastic wrap and put in fridge to chill.

Preheat oven to 350 F and slice each log into 1/4 - 1/2 in slices (your preference) and put on ungreased cookie sheets.

Bake for 20 -25 minutes or until just starting to turn a light brown on the bottom.

Tip: You can keep the unbaked logs in the fridge for a couple of weeks and bake as needed.
