Every week I make this dish. My family loves it. You can use any vegetables you have in the fridge but I have included specific ones here. The best way to serve this meal is to get every person in the family to help themselves. I line up every recipe item in individual bowls and invite everyone to make their own wrap. It's more fun! It's also a great way to use up leftovers. This tasty recipe is a favorite among the Erlics. My son's girlfriend loves this dish too! She is always over when I make it.

Ingredients

  • 4 cups black-eyed peas 4 cups black-eyed peas
  • 1 cup cooked rice 1 cup cooked rice
  • 2 tbsp chili powder 2 tbsp chili powder
  • 1 tbsp ancho chili powder 1 tbsp ancho chili powder
  • 1 tbsp chipotle chili powder 1 tbsp chipotle chili powder
  • 2 tbsp olive oil 2 tbsp olive oil
  • 1 cup sliced yellow peppers 1 cup sliced yellow peppers
  • 2 cups guacamole 2 cups guacamole
  • 2 cups romaine lettuce , in pieces2 cups romaine lettuce, in pieces
  • 1 cup sliced tomatoes 1 cup sliced tomatoes
  • 2 cups Canadian Cheddar cheese 2 cups Canadian Cheddar cheese
  • 2 cups Canadian mozzarella cheese 2 cups Canadian mozzarella cheese
  • 1 cup Yogurt 1 cup Yogurt
  • 1 tsp dill 1 tsp dill
  • 1 tsp garlic powder 1 tsp garlic powder
  • 12 tortilla wraps 12 tortilla wraps

Preparation

Boil black-eyed peas in water until soft. Drain, set aside in a large bowl. Add cooked rice. Add chili powder, ancho and chipotle powder. Stir well. Add olive oil, stir again. Set aside.

Place yellow peppers in a bowl. Place guacamole, lettuce, tomatoes in separate bowls. Place Canadian cheddar and Canadian mozzarella in a bowl and mix together. In another bowl, add yogurt, dill and garlic powder, stir well.

Place all bowls on a counter. Provide wraps to fill! Serves 6.
