Canadian Cheese and Black-Eyed Pea Supper Wraps

Every week I make this dish. My family loves it. You can use any vegetables you have in the fridge but I have included specific ones here. The best way to serve this meal is to get every person in the family to help themselves. I line up every recipe item in individual bowls and invite everyone to make their own wrap. It's more fun! It's also a great way to use up leftovers. This tasty recipe is a favorite among the Erlics. My son's girlfriend loves this dish too! She is always over when I make it.

Ingredients

  • 4 cups 4cupsblack-eyed peablack-eyed peas
  • 1 cup 1cupcooked rice
  • 2 tbsp 2tbspchili powder
  • 1 tbsp 1tbspancho chili powder
  • 1 tbsp 1tbspchipotle chili powder
  • 2 tbsp 2tbspolive oil
  • 1 cup 1cupsliced yellow pepperyellow peppers
  • 2 cups 2cupsguacamole
  • 2 cups 2cupsromaine lettuce, in pieces
  • 1 cup 1cupsliced tomatotomatoes
  • 2 cups 2cupsCanadian Cheddar cheese
  • 2 cups 2cupsCanadian mozzarella cheese
  • 1 cup 1cupYogurt
  • 1 tsp 1tspdill
  • 1 tsp 1tspgarlic powder
  • 12 12tortilla wraps

Preparation

Boil black-eyed peas in water until soft. Drain, set aside in a large bowl. Add cooked rice. Add chili powder, ancho and chipotle powder. Stir well. Add olive oil, stir again. Set aside.

Place yellow peppers in a bowl. Place guacamole, lettuce, tomatoes in separate bowls. Place Canadian cheddar and Canadian mozzarella in a bowl and mix together. In another bowl, add yogurt, dill and garlic powder, stir well.

Place all bowls on a counter. Provide wraps to fill! Serves 6.
