I altered the old favourite "stuffed celery sticks" and decided to go with peppers instead. Take half a pepper, put it on your plate, spoon in some cheese dip and take along some crackers... and voila you have an instant individual cracker dip bowl and appetizer in one! No "double dipping" concerns since you'll be the only one eating from it.
Preparation
In a bowl, mash both kinds of cheese until blended. Stir in dried fruit of choice. Pat peppers dry and cut each in half; remove and discard seeds. Spoon cheese mixture evenly into hollow of each pepper, packing lightly. Serve immediately or cover and refrigerate for up to 2 days.
