I absolutely love cheese and Italian food and this is the perfect marriage of both for me. It's comforting on a cold night and is super easy to throw together.

Ingredients

    12 oz Whole wheat pasta
    1 bunch asparagus, trimmed and cut into 2 inch pieces
    1/2 tsp dried basil
    3 1/2 cups tomato sauce
    1/4 tsp garlic powder
    1/4 tsp salt
    1/4 cup old canadian cheddar, grated
    1/4 cup canadian parmesan, grated
    1/4 cup canadian swiss, grated
    1/4 cup mozzarella, grated
    freshly ground pepper, to taste
    cooking spray

Preparation

1. Preheat oven to 350ºF. Bring a large pot of water to a boil and cook penne according to package directions. When pasta is almost done, add asparagus and boil for 1 minute, drain and return to pot.

2. In a medium bowl, combine the cheeses and set aside.

3. Add tomato sauce, basil, garlic power, salt and pepper, to pot with pasta and mix gently.

4. Lightly coat a 2qt baking dish with cooking spray, add 1/2 the penne mixture and sprinkle with 1/2 of the cheese mixture. Add remaining penne and top with the rest of the cheese. Bake for 18-20 minutes or until cheese is melted. Let rest for 5-10 minutes before serving.
