Easy chicken and barley one pot meal with a little bit of everything.

Ingredients

  • 2 Tbsp. canola oil 2 Tbsp. canola oil
  • 1-1/2 lbs. cubed chicken breasts , (boneless, skinless)1-1/2 lbs. cubed chicken breasts or chicken thighs, (boneless, skinless)
  • 2 onions , finely diced2 onions, finely diced
  • 2 cups mushrooms , chopped2 cups mushrooms, chopped
  • 2 green peppers , diced2 green peppers, diced
  • 1-1/3 cups pearl barley 1-1/3 cups pearl barley
  • 1 can (28 oz/796 mL) chopped tomatoes 1 can (28 oz/796 mL) chopped tomatoes
  • 3/4 cup chicken broth , (Campbell's)3/4 cup chicken broth, (Campbell's)
  • 2 tsp. thyme 2 tsp. thyme
  • 1 pinch salt 1 pinch salt
  • 1 pinch pepper 1 pinch pepper
  • 6 parsley sprigs , (garnish)6 parsley sprigs, (garnish)

Preparation

Heat oil on medium and brown chicken in an oven friendly pot. Add onions and let cook until softened. Add mushrooms and cook until softened. Stir to prevent sticking. Add green pepper, barley, tomatoes, broth, and thyme. Season with salt and pepper and mix well. Cover and bake at 350 F for 1 hour or until barley is tender and liquid is absorbed. Garnish with parsley.
