Chicken & Barley Casserole

  • 2 Tbsp. 2Tbsp.canola oil
  • 1-1/2 lbs. 1-1/2lbs.cubed chicken breastchicken breasts or chicken thighs, (boneless, skinless)
  • 2 2oniononions, finely diced
  • 2 cups 2cupsmushroommushrooms, chopped
  • 2 2green peppers, diced
  • 1-1/3 cups 1-1/3cupspearl barley
  • 1 can (28 oz/796 mL) 1can (28 oz/796 mL)chopped tomatoes
  • 3/4 cup 3/4cupchicken broth, (Campbell's)
  • 2 tsp. 2tsp.thyme
  • 1 pinch 1pinchsalt
  • 1 pinch 1pinchpepper
  • 6 6parsley sprigparsley sprigs, (garnish)

Heat oil on medium and brown chicken in an oven friendly pot. Add onions and let cook until softened. Add mushrooms and cook until softened. Stir to prevent sticking. Add green pepper, barley, tomatoes, broth, and thyme. Season with salt and pepper and mix well. Cover and bake at 350 F for 1 hour or until barley is tender and liquid is absorbed. Garnish with parsley.
