This is a favorite family recipe that is great for leftovers. The oven works best although you can put it in a crock pot.
Ingredients
- 8 chicken pieces , can debone or remove skin8 8chicken pieces, can debone or remove skin
- 1 cup uncooked rice 1 1cup cupuncooked rice
- 1 can mushroom soup 1 1can canmushroom soup
- 1 can chicken broth 1 1can canchicken broth or water
- 1 can onion soup , or use 1/2-1 package onion soup mix1 1can canonion soup, or use 1/2-1 package onion soup mix
- 1-1/2 cups water 1-1/2 1-1/2cups cupswater
Preparation
Lightly butter bottom of casserole dish. Spread rice in bottom. Mix together soup and broth. Place chicken pieces on top. Pour remaining liquid mixture over chicken ensuring that rice gets some liquid (optional: pour 1/2 cup liquid mixture over rice and the remainder over chicken)
